Instructions

1. Preheat oven to 350 degrees.
2. Combine the first 6 ingredients in a medium mixing bowl: mashed avocado through eggs. Stir until combined. Then stir in dry ingredients until batter is just combined. Don’t over stir.
3. Spray a mini muffin tin with nonstick spray. Use a small cookie dough scoop (or spoon) to evenly distribute the batter into 12 mini muffin cups, about ¾’s full. Press a few mini chocolate chips into the top of each. Bake for 12 – 14 minutes.
