Brown Sugar and Cinnamon TRISCUIT Granola

What You Need

  • 1 pkg. (9 oz.) TRISCUIT Crackers, divided
  • 1-1/2 cups quick-cooking oats
  • 1/2 cup flour
  • 1-1/2 tsp. ground cinnamon
  • 3/4 cup butter, softened
  • 1 cup packed brown sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 1 pkg. (5 oz.) dried cranberries (1 cup)
  • 3/4 cup pecan halves
  • 1/2 cup sunflower kernels

Instructions

  1. Heat oven to 350°F.
  2. Crush 22 crackers to form fine crumbs; mix with oats, flour and cinnamon. Coarsely crumble remaining crackers.
  3. Beat butter and sugar in large bowl with mixer until light and fluffy. Add eggs and vanilla; mix well. Gradually add oat mixture, mixing well after each addition. Stir in crumbled crackers and remaining ingredients.
  4. Crumble half the cracker mixture onto each of 2 foil-covered rimmed baking sheets.
  5. Bake 20 to 25 min. or until granola is crisp and golden brown, stirring after 12 min. Cool completely.
  6. Break any large granola pieces into smaller bite-size pieces.
Variation

Prepare using your favorite dried fruit and/or nuts.
