Tomato-Watermelon Salad

Summary

A fresh and simple summer salad!

What You Need

  • 3 cups cut-up watermelon, seeds removed
  • 1 medium yellow, orange or red ripe tomato, cored and cut into 1-inch pieces
  • 1 tablespoon chopped fresh mint or 1 teaspoon dried mint leaves
  • 1 tablespoon olive oil
  • 1 tablespoon red wine vinegar
  • 3 cups torn fresh spinach or torn romaine lettuce
  • 1 1/4 cups Kellogg's® Smart Start® Strong Heart Antioxidants cereal
  • 1/3 cup crumbled feta cheese

Instructions

  1. TOSS together watermelon, tomato and mint in a large bowl.
  2. DRIZZLE with olive oil and vinegar. Gently toss to combine.
  3. ARRANGE spinach on 6 small serving plates. Top with watermelon mixture.
  4. SPRINKLE with KELLOGG'S SMART START ANTIOXIDANT cereal and cheese.

I made this as a side-dish last night with grilled chicken and it was a HUGE hit at our home. Everyone...yes everyone even the kiddos loved it! Great pick, thanks for sharing.
