The crisp apples in this delicious main-dish salad provide 1/2 cup of fruit per serving. And as a bonus, the dark green leafy spinach both provides vitamin C and is rich in vitamin A.
I served this as a side-dish last night with BBQ chicken...it was a perfect fit!
