An unexpected use for canned pumpkin, this dip is perfect for sharing at a party or as a wholesome snack any time of year.
What You Need
1. In food processor fitted with metal blade, combine pumpkin, ricotta, oil, lemon juice, garlic, cumin, salt, pepper, cinnamon and coriander; blend for 1 to 2 minutes or until well combined and smooth.
2. Scrape dip into shallow serving bowl; refrigerate for 30 minutes. Drizzle with maple syrup and sprinkle with sunflower seeds and parsley. Serve with pita chips for dipping.
