Baked Fajita Chicken Tacos Recipe


Any night can be a fiesta! This take on fajitas is not only a delicious treat any night of the week, it's also extremely easy to make. Just a few simple ingredients and a few minutes of prep, and it's muy bueno!

What You Need

Baked Fajita Chicken Tacos Recipe


  1. Preheat oven to 375°F.
  2. Spray a large skillet with non-stick cooking spray and over medium-high heat cook yellow onions for 5-7 minutes.
  3. Add green pepper and for an additional 7-10 minutes, or until tender. Set aside.
  4. Make pico de gallo by combining tomatoes, white onion, cilantro, jalapeno, lime juice and salt and pepper. Refrigerate until ready to use.
  5. To assemble tacos spoon beans down center of taco shell and layer with chicken, cheese, peppers and onions.
  6. Bake for 10 minutes or until cheese has melted.
  7. Top with fresh pico de gallo before serving.

Chef's Tip: For a fast meal solution, pick up your favorite pico de gallo or salsa at your local grocery store.
