Spiralized Sweet Potato, White Bean and Broccolini Bake
Spiralized sweet potato acts as the noodle in this tasty and easy-to-make vegetarian baked dish.
What You Need
1 sweet potato, peeled
2 tbsp olive oil
1/4 tsp each salt and pepper
1 bunch broccolini, chopped
1 cup drained rinsed cannellini beans
1 tsp paprika
1/2 tsp garlic powder
1 jar (15.5 oz) Tostitos Chunky Salsa
1/4 cup Tostitos Creamy Spinach Dip
1 cup shredded mozzarella cheese
1 tbsp chopped fresh parsley
Preheat oven to 375°F. Spiralize sweet potato; set aside.
Heat oil in ovenproof skillet set over medium heat; sauté sweet potato “noodles” for about 6 minutes or until golden and tender. Season with salt and pepper.
Add broccolini and beans; sauté for 4 minutes. Sprinkle with paprika and garlic powder. Add salsa; toss to combine.
Dollop spinach dip over top and sprinkle with cheese. Bake for 25 to 30 minutes or until mixture is bubbly and cheese is melted and golden. Sprinkle with chopped parsley. Let cool slightly before serving.
