Italian Tomatoes and Green Beans

Summary

A tomato and green beans side gets an Italian make-over with a quick tomato sauce reduction, a drizzle of olive oil and sprinkle of Parmesan cheese.

What You Need

  • 2 cans (14.5 oz. each) Del Monte® Diced Tomatoes, not drained
  • 2 cans (14.5 oz. each) Del Monte® Cut Green Beans, drained
  • 2 Tbsp. chopped fresh basil or 2 tsp. dried basil
  • 1 Tbsp. olive oil
  • ¼ cup (1 oz.) shredded Parmesan cheese, optional

Instructions

  1. COMBINE tomatoes, green beans and basil in a large saucepan. Bring to a boil; reduce heat to medium-low. Cover and simmer 10 minutes.
  2. DRAIN vegetables over a large bowl, reserving sauce. Return sauce to saucepan, and transfer drained vegetables to the large bowl; cover to keep warm.
  3. BRING sauce and olive oil to a boil over high heat; boil, uncovered, 5 minutes or until reduced to ½ cup. Pour sauce over vegetables and sprinkle with cheese, if desired.
