Egg Stuffed Sweet Potatoes


Eat the rainbow in this nutrient-packed dish that can be served up with breakfast or dinner.

What You Need

  • 1 large sweet potato
  • 1 large egg
  • Salt
  • Pepper
  • 1 Tablespoon cilantro
  • 1/4 of an avocado
  • 2 Tablespoons Plain Greek Yogurt or Sour Cream
  • 2 Tablespoons Salsa


  1. Give your sweet potato a nice and gentle scrub.
  2. Pop it in the microwave, following your microwave’s settings for cooking a potato.
  3. As your sweet potato cooks, beat your egg with a little salt and pepper. And chop your cilantro and avocado.
  4. Once the sweet potato is cooked (a fork pierces it easily), carefully remove the sweet potato from the microwave (it’ll still be hot!), and cut a long slice down the middle without cutting through the whole potato. Scoop out the inner flesh into a small bowl and mash.
  5. Add the sweet potato flesh to your eggs and mix well.
  6. Heat a small pan coated with nonstick cooking spray over medium heat and scramble your egg-sweet-potato mixture.
  7. Lastly, assemble your stuffed sweet potato! Place the egg mixture in first. Then top with the cilantro, avocado, salsa and Greek yogurt or sour cream.
