20-Minute Minestrone


Homemade minestrone soup can be ready in minutes on a chilly day. Just simmer for 10 minutes to cook the macaroni and the soup is done.

What You Need

  • 1 yellow bell pepper, diced
  • 2 can (14.5oz.each) Del Monte® Original Recipe Stewed Tomatoes, not drained
  • 1 can (14.5oz.) Del Monte® Cut Green Beans, drained
  • 1 can (14.5oz.) College Inn® Chicken Broth
  • 1 can (15oz.) navy beans, rinsed and drained
  • ⅔ cup (2oz.) dry macaroni
  • Salt and black pepper, optional
  • 1 Tbsp. finely chopped fresh parsley, optional


  1. COMBINE all ingredients in a large saucepan.
  2. BRING to boil over high heat; reduce heat to medium-low.
  3. COVER and simmer 10 minutes or until pasta is tender. Season to taste with salt and pepper and sprinkle with parsley, if desired.

I know winter is gone, and I usually do not make soup in the spring or summertime, but this one was awesome! The tastes will blow you away, trust me this is a MUST try!
