Oatmeal Muffin Energy Balls with a Surprise Center

Get a sweet surprise when you bite into these peanutty oatmeal energy balls.

What You Need

  • 1 cup Quaker Old Fashioned Oats
  • 1/4 cup chia seeds
  • 1 tsp cinnamon
  • 1/2 cup natural peanut butter
  • 1/4 cup honey
  • 1/4 cup Starbucks Doubleshot Coffee & Protein Vanilla
  • 1/3 cup cherry jam, chilled

Instructions

  1. Mix Quaker oats, chia seeds and cinnamon. Add peanut butter, honey and Starbucks Doubleshot Coffee & Protein Vanilla; mix until everything holds together.
  2. Form 2 tablespoonfuls of mixture into ball. Create indent with finger and fill with 1 tsp jam; reroll into ball to enclose jam. Repeat to make 16 balls.
  3. Place on waxed paper–lined baking sheet; refrigerate for about 2 hours or until firm.
