Minute Maid Granola Bars

Summary

Whole, natural almonds add visual interest to these pretty granola bars. Cut and wrap each bar individually so they're on hand for healthful snacking.

What You Need

  • 1 cup chilled Minute Maid® Peach
  • 1/3 cup corn syrup
  • 1/3 cup liquid honey
  • 1/3 cup vegetable oil
  • 1 tsp vanilla
  • Pinch salt
  • 2 cups large-flake rolled oats
  • 1 cup unsalted natural (skin on) whole almonds
  • 1 cup diced dried peaches
  • 1 cup roasted unsalted sunflower seeds

Instructions

  1. In small saucepan, bring chilled Minute Maid® Peach, corn syrup, honey and oil to boil. Reduce heat to medium and cook, stirring occasionally, until slightly thickened and reduced to 1 cup, 12 to 15 minutes. Stir in vanilla and salt. Let cool for 1 minute.
  2. Meanwhile, in large bowl, stir together oats, almonds, peaches and sunflower seeds. Stir in peach juice mixture; toss to combine. Scrape oat mixture into parchment paper lined 13- x 9-inch (3 L) metal cake pan; with offset spatula, press into corners and level.
  3. Bake in 350°F (180°C) oven until golden, 20 to 25 minutes. Let cool completely in pan on rack. Cut into bars.
