Cinnamon Fruit-Pecan Snack Mix

Summary

This crunchy, cinnamon-spiced snack mix is one of our favorites!

What You Need

  • 5 cups Kellogg's® Frosted Mini-Wheats® Touch of Fruit in the Middle Raspberry cereal
  • 1/3 cup pecan halves
  • 3 tablespoons butter, melted
  • 3/4 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 1/2 cups raisins
  • 1 1/2 cups dried apricots, cut into bite-size pieces

Instructions

  1. COMBINE cereal and pecans in 15 x 10 x 1-inch baking pan. In small bowl stir together butter, cinnamon and salt. Drizzle over cereal. Toss to coat evenly.
  2. BAKE at 300° F for 10 minutes or until pecans are toasted, stirring after 5 minutes. Cool in pan on wire rack for 20 minutes. Stir in raisins and apricots. Cool completely. Store in airtight container at room temperature for up to 1 week.
Variation

If you don’t have cinnamon on hand, try substituting apple pie spice or pumpkin pie spice.

Not bad snack....even pumpkin spice almonds or walnuts and dark chocolate chips are good to add....I omit the butter.
