Tropical Rice Salad

Summary

Loaded with taste and texture, this vegetarian salad is satisfying for lunch or dinner. This recipe features Rice-A-Roni, Naked Juice and El Isleño.

What You Need

  • 1 pkg (177 g) Rice-A-Roni® Fried Rice
  • 1/4 cup Naked Coconut Water with Pineapple Juice
  • 2 tbsp olive oil
  • 2 tbsp lime juice
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • 1 clove garlic, minced
  • 1/4 tsp each salt and pepper
  • 3 cups packed baby spinach
  • 1/2 cup thinly sliced red cabbage
  • 1/2 cup sliced ripe mango
  • 1 green onion, finely chopped
  • 2 tbsp finely chopped cilantro leaves
  • 1/3 cup El Isleño Original Plantain Chips, lightly crushed

Instructions

  1. Cook rice according to package directions. Cool slightly. Meanwhile, whisk pineapple juice with oil, lime juice, mustard, honey, garlic, salt and pepper until well coated.
  2. Toss in spinach, cabbage, mango, green onion and cilantro. Top with plantain chips.
Variation

Substitute parsley for cilantro if desired.
