Vanilla Coconut Custard with Fresh Raspberries

Summary

Benefiber® allows you the flexibility to take your fiber anyway you choose.

What You Need

  • 1/2 cup light coconut milk
  • 1/2 cup plain soy milk
  • 1 tbsp sugar
  • 1 vanilla pod cut in half long ways with seeds scraped out (can use 1/8 teaspoon vanilla extract)
  • 1 tbsp cornstarch
  • 2 tsp Benefiber® unflavored powder
  • 2 fresh raspberries

Instructions

  1. In a small mixing bowl whisk together coconut milk, sugar, cornstarch and Benefiber®.
  2. Pour mixture into a medium sized heavy bottom pot and heat over medium low heat stirring often.
  3. Once custard boils turn off heat and continue whisking for two additional minutes.
  4. Pour custard into 4 individual serving cups and chill for an hour.
  5. Serve with fresh raspberries on top.
