Pita Chip and Hummus Crusted Salmon


This quick fish dinner, featuring Stacy’s and Sabra, is full of flavor, yet easy to prepare, making it perfect for a busy weeknight dinner.

What You Need

  • 1 cup Stacy’s® Simply Naked® Pita Chips, finely crushed
  • 1/4 cup olive oil, divided
  • 1 tbsp chopped fresh parsley
  • 1 tbsp chopped fresh dill
  • 1/2 tsp each salt and pepper, divided
  • 1/4 cup Sabra Lemon Twist Hummus
  • 4 skinless salmon fillets (5 to 6 oz each), patted dry
  • 2 tbsp apple cider vinegar
  • 1 tbsp honey
  • 5 cups baby arugula
  • 1 cup halved cherry tomatoes


  1. Preheat oven to 400˚F. Toss together chips, 1 tbsp olive oil, parsley, dill and half of the salt and pepper. Spread 1 tbsp hummus over each salmon fillet; coat with pita chip mixture, pressing gently to adhere.
  2. Transfer to parchment paper–lined baking sheet; bake for 10 to 12 minutes or until fish starts to flake.
  3. Meanwhile, in large bowl, whisk together remaining oil, vinegar, honey, and remaining salt and pepper.
  4. Toss arugula and tomatoes with dressing; divide evenly among 4 plates. Top with salmon.

Substitute Arctic char or your favorite white-fleshed fish for the salmon, adjusting cooking time for thickness of fish.
