Pepper-Crusted Scallops with Angel Hair Pasta

Instructions

  1. Pat scallops dry with paper towel. Coat scallops in flour; shaking off excess. Dip scallops in eggs, then coat with chips.
  2. In large nonstick skillet, heat oil over medium-high heat; cook scallops for 2 to 3 minutes per side or just until cooked through and crust is golden brown. Remove from pan; keep warm.
  3. Meanwhile, cook pasta according to package directions; drain well. Divide among 4 plates or shallow bowls. Top with scallops and sprinkle with parsley.
Variation

Serve with lemon wedges if desired.
