Root Beer Marinated Shrimp Tacos


These mouthwatering grilled shrimp pair beautifully with bean dip and creamy avocado to make a great summer taco. This recipe features MUG and Fritos.

What You Need

  • 1 cup MUG Root Beer
  • 1/4 cup lime juice
  • 1 tbsp canola oil
  • 2 tbsp Worcestershire Sauce
  • 2 cloves garlic, minced
  • 1/2 tsp chili flakes
  • 1 1/2 lb large shrimp, peeled, deveined and tail removed (16/20 count)
  • 3 tbsp lime juice
  • 3 tbsp olive oil
  • 1 clove garlic, minced
  • 1/2 tsp each salt and granulated sugar
  • 1/4 tsp each ground cumin
  • 1 bag (14 oz) shredded coleslaw mix
  • 8 corn tortillas, warmed (6-inch)
  • 1/4 cup FritosĀ® Bean Dip
  • 1 ripe avocado, peeled, pitted and thinly sliced
  • 2 green onions, finely chopped
  • Lime wedges, for serving


  1. Root Beer Marinated Shrimp: In bowl, stir root beer with lime juice, oil, Worcestershire sauce, garlic and chili flakes. Pat shrimp dry with paper towel and toss shrimp in marinade. Cover and marinate, in refrigerator, for 30 to 60 minutes.
  2. Preheat grill to medium-high, grease grate well. Remove shrimp from marinated and shake off any excess. Grill shrimp, 2 to 3 minutes per side or until start to curl, turn pink and cooked through.
  3. Coleslaw: Meanwhile, whisk lime juice with oil, garlic, salt, sugar and cumin. Toss dressing with coleslaw mix; Let stand for 10 minutes.
  4. Assembly: Spread bean dip evenly on each tortilla. Top with some coleslaw, avocado, shrimp and green onions. Serve with lime wedges and remaining coleslaw.
  5. Serve with pickled jalapenos for a spicy kick.

Alternatively, use prepared coleslaw mix and dress as package directs.
