Ranch Chicken Quesadillas

Summary

Lunch or dinner, appetizer or snack - these Quesadillas are perfect anytime!

What You Need

  • 1/2 lb Eckrich Bacon Ranch Chicken Breast (cubed or julienne sliced)
  • 1/2 cup shredded Monterey Jack cheese
  • 1/2 cup shredded Cheddar cheese
  • 1/2 cup chopped white onion
  • 1/4 cup diced tomato
  • 2 8" flour tortillas
  • 1 tbsp fresh cilantro, diced
  • Sour cream for dipping

Instructions

  1. Combine chicken, onion, cheese and tomato in medium bowl.
  2. Spray one side of each tortilla with nonstick cooking spray.
  3. Place tortilla greased side down on a hot griddle or frying pan.
  4. Place chicken mixture on half of tortilla and fold.
  5. Cook over low heat for 1 - 2 minutes on each side until tortilla is golden brown.
  6. Cut into wedges, garnish with fresh cilantro.
  7. Repeat steps with second tortilla.
  8. Serve with sour cream for dipping.

My kiddos always add ranch to their tacos...and I always thought that was odd. However, I knew they would just fall in love with this recipe so I made it! Okay, I now know why they add ranch to their tacos...amazing flavor! Whoohoo....I found a new recipe for the entire family.
