Instructions
- Preheat oven to 400°F. Coat 11x8 baking dish with nonstick cooking spray. Prepare mashed potatoes according to package instructions. Stir in garlic and mix well.
- Meanwhile, in a large skillet coated with nonstick cooking spray over medium high heat, cook beef for 4 to 5 minutes, stirring to form small crumbles. Sprinkle seasoning mix over beef and cook for another minute. Add corn and gravy, and cook for 2 to 4 minutes, stirring occasionally.
- Spoon beef mixture evenly into bottom of baking dish. Layer prepared mashed potatoes evenly on top and sprinkle with cheese. Bake uncovered for 20 to 25 minutes, or until internal temperature reaches 165 degrees and cheese is melted. Garnish with chopped tomatoes and sliced green onions if desired.
Variation
If desired, substitute whole corn kernels with black beans, chopped peppers, chopped onions or diced tomatoes. Or use a combination of all of them.
