Clamato Grilled Chicken with Honey-Ancho BBQ Sauce

What You Need

  • Chicken:
  • 8 chicken breasts, boneless, skinless
  • 2 tablespoons vegetable oil
  • 2 tablespoons all-purpose seasoning
  • Sauce:
  • 3 tablespoons vegetable oil
  • ½ medium white onion, minced
  • 1 clove garlic, minced
  • 2 cups Clamato® Tomato Cocktail
  • 5 tablespoons tomato paste
  • ½ cup white vinegar
  • ¼ cup honey
  • ½ cup white sugar
  • 4 teaspoons ancho chile powder
  • 1 teaspoon salt
  • ½ teaspoon coriander, ground
  • ½ teaspoon ginger ground
  • ½ teaspoon black pepper

Instructions

  1. Preheat grill to 375° F (place grill on high for 10 minutes with lid closed), then reduce to medium.
  2. In a saucepot, heat oil over medium heat, add onions and garlic cover and cook for 6-8 minutes.
  3. Then add Clamato, tomato paste, white vinegar, honey, sugar, ancho chile powder, salt, coriander, ginger and black pepper; bring to boil. Reduce heat to medium-low and cook for 12-15 minutes; keep warm.
  4. Place chicken breast in a bowl, add oil and seasoning; toss to coat well.
  5. Place chicken breast on grill, cook for 5-7 minutes then flip, brush with BBQ sauce, cook an additional 5-7 minutes, flip and brush with BBQ sauce (chicken is cooked when meat is fork tender).
  6. Remove from grill and place cooked chicken on platter.
  7. Serve with remaining sauce with rice and vegetables.
