Flavorful beef enchiladas with a flavor everyone enjoys

Instructions
In a large sauté pan, heat oil over medium-high heat, add ground beef, salt, onion powder, garlic powder and black pepper; mix well.
When beef is cooked, remove mixture from pan; keep warm.
In the sauté pan used to brown beef heat oil, add onion, garlic and jalapeño; sauté for 10 minutes.
Add salt, cumin, coriander, Clamato, tomato paste and water; reduce heat and simmer for 15 minutes, stirring a few times.
Roll up each tortilla with ground beef and cheese; place in a lightly greased baking dish and spoon tomato sauce over; cover with aluminum foil and bake at 350° for 10 minutes.
Uncover and sprinkle with shredded Cheddar and Monterey cheese; bake 5 minutes longer or until cheese melts. Serve immediately.
