RITZ No-Melt "Ice Cream"

Instructions

  1. Break up 24 crackers coarsely.
  2. Mix cream cheese and marshmallow creme in medium bowl until blended. Gently stir in whipped topping and chopped crackers.
  3. Scoop cream cheese mixture into 26 balls, each about 1-1/2 inches in diameter; place on parchment-covered rimmed baking sheet. Top with sprinkles.
  4. Freeze 4 hours or until firm.
  5. Serve on remaining crackers.
Variation

Refrigerator RITZ No-Melt "Ice Cream" - Prepare recipe as directed, except do not freeze the cream cheese balls. Instead, refrigerate them 2 hours or until chilled.

OK...we made these on Spring Break and the neighbor kiddos looked at us like we were cray-cray! However, I had them try it and they went home and told their parents. Next thing I knew I was getting text messages asking for the recipe! Great Job MMS and Ritz!
