Spicy Breakfast Tacos


Warm, soft tacos stuffed with a zesty combination of scrambled eggs, salsa, shredded cheese and spicy guacamole hit the spot for leisurely weekend brunches or as a weekday breakfast.

What You Need

Spicy Breakfast Tacos


  1. Melt butter in large nonstick skillet set over medium heat until bubbly; cook ham, stirring occasionally, for about 2 minutes or until heated through.
  2. In bowl, whisk together eggs, salt, pepper and 2 tbsp water until frothy; pour into skillet. Cook, stirring occasionally for 4 to 6 minutes or until set.
  3. Meanwhile, heat tortillas according to package directions. Divide lettuce, scrambled egg mixture, cheese and tomato among warm tortillas; top with guacamole and sprinkle with green onions. Serve with salsa on the side.
  4. TIP: For a slightly different flavor, replace romaine lettuce with lightly packed baby spinach leaves and, if preferred, substitute corn tortillas for flour tortillas.
