What You Need

Oatmeal Pancakes


  1. Let 1 1⁄2 c rolled oats soak in 1 c 1% buttermilk for 15 min.
  2. Mix 1 c flour, 1⁄2 c whole-wheat flour, 1⁄4 c sugar, 1 tsp baking soda, 1 tsp baking powder, 1⁄2 tsp salt & 1⁄2 tsp ground cinnamon.
  3. Whisk 2 eggs with 2 egg whites & stir in 1 1⁄2 c 1% milk.
  4. Pour about 1⁄2 c batter per pancake onto a skillet over med high heat & cook 2 mins each side.
  5. Garnish with fruit, mint leaves & agave nectar!
