Sparkling Vampire Bite Cocktail

This cocktail spiked with tequila is perfect for celebrating Halloween, but so wickedly tasty you’ll make it all year long! Try it for a new twist on Cinco de Mayo!

In small saucepan set over high heat, combine frozen cherries, juice and jalapeno; bring to boil. Reduce heat and simmer for 12 to 15 minutes. Let cool completely.
Pour cherry mixture and lime juice into blender. Purée until smooth; strain. Refrigerate or freeze until thoroughly chilled.
Divide cherry mixture evenly among 8 (5 oz) champagne coupe glasses. Top each with 1.5 oz tequila and sparkling water. Garnish with jalapeño slices.
For a very smooth cocktail, strain cherry and jalapeño mixture after puréeing.

Variation

Serve cocktail over ice in highball glasses.
