Preheat the oven to 400 degrees. Place the unrolled puff pastry on a baking tray lined with parchment paper and brush with egg wash.
Then, cut the pastry into approximately 40 small rectangles. Double-up the pastries by placing one rectangle on top of the other until there are 20 total rectangles of pastry. Bake for 10 minutes.
While the pastry is baking, slice the brie into small pieces. Place the brie on top of the warm pastry puffs and place back into the oven for one to two minutes, until the brie is melted.
Top each pastry with a spoonful of cranberry sauce and garnish with fresh thyme leaves. Serve on elegant Chinet® Cut Crystal® appetizer plates.
